Dutch Kills is known for their "bespoke" cocktails, where you tell the bartenders about your preferences and they pick a drink for you. We didn't sit at the bar; we sat in a booth, so there was a middleman in the form of a server, and I'm not sure how well this worked here. But I custom-ordered a drink asking for something spirit-forward and bitter with whisky. I got this drink in the foreground (unlike last time, the drink was listed on the receipt as "open Bourbon," so it may have indeed been off-menu).
