Bay scallop hand roll. Like Sugarfish, KazuNori is a little bit pretentious in the insistence that you have the rolls exactly as the chef indicates, so no added sauces or anything. I don't use pretentious as a pejorative here, just a fact. The shtick is that if a roll would benefit from sauce, it is either included directly in the roll, as with this bay scallop, or you are specifically directed to use it. I appreciated the chef's efforts to highlight the taste of the fish and provide high quality seafood rather than using other ingredients as a crutch.
