The first course was this soup, one of the most amazing soups I have ever had in my life. Unfortunately, I don't remember what it was (in fact, we do not have notes of any of the food we ate in Paris and the tasting menus were all "at the chef's pleasure" so there is no written record to reference). Amy suspects it was cauliflower.
