Cantillon is perhaps the most famous brewery practicing the spontaneous fermentation style of beer production: the natural yeasts and bacteria in the air are what is used to ferment the beer, as opposed to adding yeast intentionally during the brewing process. Cantillon only brews lambics and only uses spontaneous fermentation. This makes them fairly unique. They specialize, and the product is one of the holy grails for sour beer aficionados.
