A lot of the prep-work is done literally right in front of you. It seems like as much as possible, Jose wants to take the preparation out of a back room. He's in a good position to do this, because essentially this serves to demystify the process of how these dishes are prepared. But because many of them involve really crazy "molecular gastronomy" type experimentation, there's still a lot of magic.
