Yes, you open up that walnut shell to get the walnut concoction inside. Jose loves his "molecular gastronomy" which is essentially using science to do crazy things with food. Crystalizing food, weird effects, textures you wouldn't expect, drinks in solid form, etc, is all par for the course here.
