Humans are not at much risk in these fights; only 30 people have been killed over 200 years of bullfighting in Sevilla (all but 3 were lowly banderilleros), and the bull always dies: if he kills a matador, another matador comes in to finish the job. Even the bull's mother is often executed to stave off the flow of evil viewed to have created the bull.
